A Birthday to Remember with DAOU & Colomé Celebrating my mother’s birthday was made even more special thanks to two incredible wines—DAOU Cabernet Sauvignon 2021 and Colomé Auténtico Malbec 2020. The star of the evening was undoubtedly the DAOU Cabernet Sauvignon. From the first sip, it enveloped us in its rich, velvety embrace. The deep dark fruit flavors, hints of cocoa, and perfectly balanced oak made every glass feel like a true indulgence. It was bold yet elegant, a wine that effortlessly brought warmth and joy to our gathering. Seeing my mother savor each sip with a smile made it all the more memorable. The Colomé Auténtico Malbec also delivered beautifully, with its pure expression of high-altitude Malbec. It was powerful, with ripe blackberries, spice, and a smooth, lingering finish—an excellent complement to the evening. These wines didn’t just enhance our meal; they became part of the celebration, elevating every toast and conversation. A heartfelt thank you to DAOU and Colomé for making this special occasion truly unforgettable!

    Kan tot 10 jaar bewaard worden. De 50 hectare wijngaarden van Fraser Gallop genieten een prachtige ligging op zachte hellingen op slechts 6 km van de kust in Margaret River's noordelijke Wilyabrup subregio. Dankzij het gematigde zeeklimaat en de goed afwaterende kiezel- en kleibodems zijn de omstandigheden hier ideaal voor de productie van krachtige rode wijnen in Medoc-stijl, die doen denken aan die in Bordeaux.

    Deze pittige Cabernet Sauvignon en Merlot blend is gemaakt van wijnstokken geplant op noordelijke hellingen, waardoor alle druiven optimaal kunnen rijpen. De wijnmakerij voegt ook een kleine hoeveelheid Cabernet Franc, Petit Verdot en Malbec toe aan de cuvee voor extra karakter.

    Na de oogst worden de druiven zorgvuldig gesorteerd en elk ras apart vergist. De jonge wijn wordt vervolgens 9 maanden gerijpt in gebruikte Franse eiken vaten, waardoor een subtiel vleugje kruiden wordt toegevoegd en de stevige tannines worden verzacht. Hierdoor ontstaat een gemakkelijk drinkbare rode wijn met sappige cassis, pruimen en wilde bessen, gekruid met hints van geroosterd eikenhout, kruiden en tabaksbladeren op de lange afdronk. Het krachtige smaakprofiel maakt het een geweldige match met vleeswaren, rijpe kazen, geroosterd rundvlees en lamsvlees, en rijke vlezige raguesauzen geserveerd met verse pasta.
