    Opgericht door Emil en Sonette Den Dulk in 1994, is De Toren Private Cellar een boutique wijnhuis gespecialiseerd in wereldberoemde Bordeaux-stijl wijnen. De wijngaarden zijn gelegen in de Polkadraai heuvels met uitzicht op het pittoreske Stellenbosch, False Bay in het zuiden en de beroemde Tafelberg in het westen. De naam De Toren komt uit het Nederlands en verwijst naar de structuur van de kelder die vinificatie door zwaartekracht mogelijk maakt. Hun eerste wijn was een Bordeaux blend met een overwicht aan Cabernet Sauvignon, genaamd Fusion V en uitgebracht in 1999.

    Deze krachtige Zuid-Afrikaanse wijn wordt gemaakt van een blend van Cabernet Franc, Cabernet Sauvignon, Malbec, Merlot en Petit Verdot druivensoorten. De druiven groeien in de kuststreek op zand- en granietgrond waar de wijnstokken hun wortels diep ingraven. De gisting vindt vervolgens plaats in kleine houten vaten bij een gecontroleerde temperatuur. De wijn rijpt vervolgens 12 maanden in eikenhouten barriques.

    Het is een krachtige en ronde wijn met een dichte karmozijnrode kleur en granaatrode nuances aan de randen. In de neus toont de wijn aroma's van moerbei, pruim en braam, gevolgd door tonen van donkere chocolade, kruiden en theebladeren. Het is een droge wijn met een uitstekende consistentie en zachtheid. De tannines zijn dicht maar fluweelzacht en de afdronk is lang met aangename minerale tonen. Hij is perfect als begeleider van rijke vegetarische gerechten, bij Beef Bourguignon of gebakken feta.
