Belangrijke Georgische wijngebieden
Er zijn negen Georgische wijngebieden, die het hele land bestrijken.
In het noordoosten, aan de voet van de Kaukasus, is Kakheti het meest populaire en productieve gebied. In het centrum van Georgië ligt Kartli, waar de druiven zich hebben aangepast aan het hete en droge klimaat. Aan de westelijke grens ligt de Imereti, waar de wijnstokken profiteren van bescherming tegen de wind. Het subtropische westen produceert voornamelijk zoete wijnen voor de lokale markt.
Georgische druivenrassen
Georgië is het land met de meeste druivenrassen ter wereld. Het telt er ongeveer 500, hoewel er vandaag minder dan 50 worden gevinifieerd. Tot de inheemse Georgische druivenrassen behoren de witte Rkatsiteli, die vooral in het oosten van het land wordt geteeld, en de Mtsvane, die zes subvariëteiten kent. Ze kunnen zowel volgens de Europese methode, met korte maceraties, als volgens de traditionele methode, met lange maceraties in de qvevri, gevinifieerd worden, wat totaal verschillende resultaten oplevert.
