Merlot uit de Nieuwe Wereld, uit Californië of Australië, is meestal wat rijker en rijper en past goed bij een sappige steak, gebarbecuede ribbetjes of een stevige stoofpot. Bordeaux-wijnen op basis van merlot zijn meestal meer ingetogen en aards, passend bij wildgerechten als wild, fazant of een eenvoudige ratatouille.
