A Birthday to Remember with DAOU & Colomé Celebrating my mother’s birthday was made even more special thanks to two incredible wines—DAOU Cabernet Sauvignon 2021 and Colomé Auténtico Malbec 2020. The star of the evening was undoubtedly the DAOU Cabernet Sauvignon. From the first sip, it enveloped us in its rich, velvety embrace. The deep dark fruit flavors, hints of cocoa, and perfectly balanced oak made every glass feel like a true indulgence. It was bold yet elegant, a wine that effortlessly brought warmth and joy to our gathering. Seeing my mother savor each sip with a smile made it all the more memorable. The Colomé Auténtico Malbec also delivered beautifully, with its pure expression of high-altitude Malbec. It was powerful, with ripe blackberries, spice, and a smooth, lingering finish—an excellent complement to the evening. These wines didn’t just enhance our meal; they became part of the celebration, elevating every toast and conversation. A heartfelt thank you to DAOU and Colomé for making this special occasion truly unforgettable!

    Het Maison Philipponnat werd in 1522 opgericht in Mareuil-sur-Ay en is een van de meest prestigieuze Champagne producerende bedrijven ter wereld, alom bekend om zijn grote geschiedenis (het was de leverancier van de Franse koning Lodewijk XIV) en om de uitmuntendheid van zijn wijnen. Het bedrijf ligt midden in de Champagnestreek en bezit ongeveer 20 hectare wijngaarden, waaronder de zeer prestigieuze Clos des Goisses.

    De cuvée Royale Réserve Non-Dosé is een blend van klassieke Champagnedruiven (Pinot Noir, Chardonnay en Pinot Meunier) afkomstig van Grand Cru en Premier Cru wijngaarden in Ay en Mareuil-sur-Ay. Voor de cuvée wordt ongeveer 20-30% reservewijn gebruikt die in houten vaten rijpt. Na de tweede gisting rust de wijn 3 jaar op de droesem. Na het degorgeren wordt er geen dosering toegevoegd om de pure expressie van het terroir zoveel mogelijk te behouden.

    Perfect als aperitief, bij sushi of vis carpaccio, Philipponnat Royale Reserve Non-Dose Brut Champagne heeft een gouden kleur met briljante reflecties en een fijn en persistent perlage. In de neus onthult hij frisse aroma's van meidoorn en lindebloesem, hints van brioche en broodkorst, citrustonen en exotisch fruit. In de mond heeft hij een duidelijke mineraliteit en een verfrissende toets. De afdronk is lang en elegant.
