A Birthday to Remember with DAOU & Colomé Celebrating my mother’s birthday was made even more special thanks to two incredible wines—DAOU Cabernet Sauvignon 2021 and Colomé Auténtico Malbec 2020. The star of the evening was undoubtedly the DAOU Cabernet Sauvignon. From the first sip, it enveloped us in its rich, velvety embrace. The deep dark fruit flavors, hints of cocoa, and perfectly balanced oak made every glass feel like a true indulgence. It was bold yet elegant, a wine that effortlessly brought warmth and joy to our gathering. Seeing my mother savor each sip with a smile made it all the more memorable. The Colomé Auténtico Malbec also delivered beautifully, with its pure expression of high-altitude Malbec. It was powerful, with ripe blackberries, spice, and a smooth, lingering finish—an excellent complement to the evening. These wines didn’t just enhance our meal; they became part of the celebration, elevating every toast and conversation. A heartfelt thank you to DAOU and Colomé for making this special occasion truly unforgettable!

    Davis Bynum was de eerste wijnmaker in de Russian River Valley die in de jaren 1970 een Pinot Noir met één wijngaard produceerde. Hij behoorde tot de pioniers van de regio die beseften dat het koele klimaat bij uitstek geschikt was voor Pinot Noir en Chardonnay, en hij wilde de Bourgondische aanpak nabootsen met een unieke Californische twist. In 2007 werd het landgoed overgenomen door Bynums grote vriend, Greg Morthole, die de erfenis van zijn mentor voortzet door te streven naar innovatie met behoud van de hoogst mogelijke kwaliteitsnormen.

    Deze prachtige Pinot uit één wijngaard is gemaakt in een rijkere stijl met veel donker fruitkarakter in evenwicht met een frisse frisheid. In de neus zijn er hints van cassis, bramen en rijpe donkere pruimen, terwijl de eerste slok een volle body, fluwelen textuur en zeer zachte tannines onthult. Na de vinificatie wordt de wijn gedurende 11 maanden gerijpt in een combinatie van Frans en Hongaars eikenhout, wat subtiele rokerige en zoete kruidentonen toevoegt.

    De kracht en finesse van deze wijn maken het een geweldige match voor rijke eend gerechten zoals Peking eend en gerookte eend salades. Hij schittert ook bij risotto's met rode biet, pasta met champignons en geroosterd varkensvlees.
