A Birthday to Remember with DAOU & Colomé Celebrating my mother’s birthday was made even more special thanks to two incredible wines—DAOU Cabernet Sauvignon 2021 and Colomé Auténtico Malbec 2020. The star of the evening was undoubtedly the DAOU Cabernet Sauvignon. From the first sip, it enveloped us in its rich, velvety embrace. The deep dark fruit flavors, hints of cocoa, and perfectly balanced oak made every glass feel like a true indulgence. It was bold yet elegant, a wine that effortlessly brought warmth and joy to our gathering. Seeing my mother savor each sip with a smile made it all the more memorable. The Colomé Auténtico Malbec also delivered beautifully, with its pure expression of high-altitude Malbec. It was powerful, with ripe blackberries, spice, and a smooth, lingering finish—an excellent complement to the evening. These wines didn’t just enhance our meal; they became part of the celebration, elevating every toast and conversation. A heartfelt thank you to DAOU and Colomé for making this special occasion truly unforgettable!

    Het wijnhuis van de familie Matetic werd opgericht in 1999 na een aantal jaren van aandachtige studie en analyse van het lokale terroir in de Chileense Rosario Vallei. Daarvoor was de familie succesvolle schapenhouders in Punta Arenas sinds hun aankomst in Chili vanuit hun Kroatische thuisland in 1892. Hun filosofie draait om het produceren van topkwaliteit druiven door het volgen van biologische en biodynamische principes in de wijngaard en wijnmakerij om zo veel mogelijk in overeenstemming met Moeder Natuur te werken.

    De druiven voor deze prachtige Chardonnay zijn afkomstig uit de Rosario Vallei in San Antonio, waar de wijnstokken zijn geplant op zand- en kleigrond. Eenmaal rijp worden de druiven met de hand geoogst en streng geselecteerd voordat ze met inheemse gisten in Franse eikenhouten vaten worden gefermenteerd. De wijn laat vervolgens 12 maanden rusten op de droesem met battonage of roeren van de droesem gedurende de eerste zes maanden om extra complexiteit toe te voegen.

    Het voluptueuze smaakprofiel van deze Chardonnay maakt het een geweldige match met geroosterde kip, pasta's geserveerd in een rijke, romige saus, of een verscheidenheid aan kazen. In de neus zijn er aantrekkelijke toetsen van honing, rijpe perziken en pittige citrusvruchten, terwijl in de mond een goed afgeronde textuur, een volle body en een vleugje frisheid zorgen voor evenwicht en harmonie.
