A Birthday to Remember with DAOU & Colomé Celebrating my mother’s birthday was made even more special thanks to two incredible wines—DAOU Cabernet Sauvignon 2021 and Colomé Auténtico Malbec 2020. The star of the evening was undoubtedly the DAOU Cabernet Sauvignon. From the first sip, it enveloped us in its rich, velvety embrace. The deep dark fruit flavors, hints of cocoa, and perfectly balanced oak made every glass feel like a true indulgence. It was bold yet elegant, a wine that effortlessly brought warmth and joy to our gathering. Seeing my mother savor each sip with a smile made it all the more memorable. The Colomé Auténtico Malbec also delivered beautifully, with its pure expression of high-altitude Malbec. It was powerful, with ripe blackberries, spice, and a smooth, lingering finish—an excellent complement to the evening. These wines didn’t just enhance our meal; they became part of the celebration, elevating every toast and conversation. A heartfelt thank you to DAOU and Colomé for making this special occasion truly unforgettable!

    Drink hem nu of bewaar hem tot 15 jaar in een kelder. Het wordt aanbevolen om de wijn een half uur te decanteren.

    Na zijn studie aan de Tuinbouwfaculteit in Lednice en het behalen van het WSET-diploma in Londen richtte Miro Fondrk zijn bedrijf in 2008 op, aanvankelijk als boetiekwijnhuis. In 2015 veranderde het bedrijf van hoofdkantoor en werd de kelder gemoderniseerd en vergroot. Vandaag de dag ligt de totale productie rond de 15-20 duizend flessen per jaar, waarvan 75% rode wijnen zijn. De druiven komen van de wijngaarden van het bedrijf en worden met veel zorg en aandacht geselecteerd en verwerkt om wijnen van hoge kwaliteit te produceren.

    De 100% Hron druiven (een kruising tussen Castets en Aboriou Noir) worden met de hand geselecteerd en geoogst. Daarna laat men ze bij een lage temperatuur weken voordat de gisting in roestvrijstalen tanks plaatsvindt. De wijn rijpt vervolgens 6 maanden op de droesem en rijpt uiteindelijk in nieuwe Franse eiken vaten.

    De Hron Private Reserve Miro Fondrk heeft een diepe robijnrode kleur en een intens aromatisch profiel met tonen van bosbessen, bramen en andere rijpe bosbessen, gevolgd door hints van hout. In de mond is hij geconcentreerd en vol, sappig en complex met stevige en goed geïntegreerde tannines. Hij past heel goed bij rood vlees of lamsvlees.
