A Birthday to Remember with DAOU & Colomé Celebrating my mother’s birthday was made even more special thanks to two incredible wines—DAOU Cabernet Sauvignon 2021 and Colomé Auténtico Malbec 2020. The star of the evening was undoubtedly the DAOU Cabernet Sauvignon. From the first sip, it enveloped us in its rich, velvety embrace. The deep dark fruit flavors, hints of cocoa, and perfectly balanced oak made every glass feel like a true indulgence. It was bold yet elegant, a wine that effortlessly brought warmth and joy to our gathering. Seeing my mother savor each sip with a smile made it all the more memorable. The Colomé Auténtico Malbec also delivered beautifully, with its pure expression of high-altitude Malbec. It was powerful, with ripe blackberries, spice, and a smooth, lingering finish—an excellent complement to the evening. These wines didn’t just enhance our meal; they became part of the celebration, elevating every toast and conversation. A heartfelt thank you to DAOU and Colomé for making this special occasion truly unforgettable!

    Paco Rodero en zijn vrouw Conchi Villa zijn de oprichters van het project Pago de los Capellanes, een landgoed in de wijnstreek Ribera del Duero, op korte afstand van Pedrosa de Duero. De naam van het wijnhuis verwijst naar de historische wijngaard van de inheemse druivensoort Tempranillo die eeuwen geleden toebehoorde aan de kapelaans van de stad (Capellanes in het Spaans).

    De Tempranillo druiven worden geselecteerd en geoogst van wijngaarden die meer dan tachtig jaar oud zijn, gelegen in Pedrosa de Duero op klei-kalksteen en steenachtige bodems met een lage productie, ongeveer 800 meter boven zeeniveau. Na de gisting, bij een gecontroleerde temperatuur van 28 graden, en de malolactische gisting rust de wijn 14 maanden in Franse eikenhouten vaten.

    Pago de los Capellanes Reserva is een elegante en complexe wijn met een robijnrode kleur en een breed en intens aromatisch profiel. De neus onthult tonen van rijp rood fruit (kers, braam, aalbes en pruim), gevolgd door hints van kokos en zoete specerijen. In de mond is hij evenwichtig met een levendige frisheid en een krachtig karakter. Hij is sappig en zijdeachtig met rijpe en zachte tannines. De afdronk is lang en doet denken aan geroosterde tonen. Een aanrader bij speenvarken of bij gegrild lamsvlees.
