Een onvergetelijke verjaardag met DAOU & Colomé Het vieren van mijn moeders verjaardag werd nog specialer dankzij twee ongelooflijke wijnen - DAOU Cabernet Sauvignon 2021 en Colomé Auténtico Malbec 2020. De ster van de avond was ongetwijfeld de DAOU Cabernet Sauvignon. Vanaf de eerste slok werden we omarmd door een rijke, fluweelzachte smaak. De diepe aroma's van donker fruit, hints van cacao en perfect gebalanceerd eikenhout zorgden ervoor dat elk glas aanvoelde als een ware verwennerij. Hij was gedurfd en toch elegant, een wijn die moeiteloos warmte en vreugde bracht aan onze bijeenkomst. Toen ik mijn moeder elke slok met een glimlach zag proeven, was het des te gedenkwaardiger. De Colomé Auténtico Malbec leverde ook prachtig, met zijn pure expressie van hooggelegen Malbec. Hij was krachtig, met rijpe bramen, kruiden en een zachte, aanhoudende afdronk - een uitstekende aanvulling op de avond. Deze wijnen versterkten niet alleen onze maaltijd; ze werden een deel van de viering, waardoor elke toast en elk gesprek een hoogtepunt werd. Hartelijk dank aan DAOU en Colomé voor het onvergetelijk maken van deze speciale gelegenheid!

    Staglin Estate is een familiebedrijf dat in 1985 werd opgericht door de familie Staglin met als doel wijnen te produceren met een onderscheidend karakter, mede dankzij de hulp van de wijnbouwer David Abreu. Het landgoed, gelegen op Rutherford Bench in Napa Valley, dateert eigenlijk al van 1868 en de familie Staglin ziet zichzelf als de laatste generatie in een lange historische lijn van beheerders. De wijngaarden worden biologisch bewerkt en produceren wijnen die nauw verbonden zijn met het grondgebied, in een ultramoderne ondergrondse productie-installatie.

    Salus Estate Chardonnay wordt geproduceerd volgens traditionele Bourgondische wijnbouwtechnieken, waarbij de unieke kwaliteit van het fruit altijd wordt gerespecteerd. De druiven worden met de hand geselecteerd, geperst en in vaten gegist. De zuurgraad en frisheid worden behouden door de malolactische gisting te beperken. De wijn blijft vervolgens tien maanden op zijn droesem liggen in grote vaten om de aromatische frisheid en rondheid te optimaliseren.

    Deze typische Napa Chardonnay heeft een schitterende gouden kleur. Hij is rijk, complex en krachtig, met aroma's van rijpe appel, abrikozenpitten, sinaasappelbloesem, honing, munt, perzik en kruiden.De volle rijpheid van de druiven komt niet alleen tot uiting in de body van de wijn, maar ook in het alcoholpercentage. Probeer hem eens bij varkensvlees, zalm of tonijn.
