    Celestino Gaspari richtte Zyme op in zijn garage in 1999 na vele jaren te hebben samengewerkt met de legendarische wijnmaker Giuseppe Quintarelli, met wiens dochter Celestino later trouwde. Celestino had een agrarische achtergrond en leerde al snel hoe hij spectaculaire traditionele Amarone en Valpolicella wijnen moest maken onder Giuseppe's voogdij. Vervolgens werkte hij als wijnbouwconsultant en hielp meer dan een dozijn wijnhuizen in de Veneto te lanceren, voordat hij besloot zich te richten op zijn eigen project.

    Celestino's Valpolicella Superiore wordt op traditionele wijze gemaakt van Corvina-, Corvinone- en Rondinella-druiven die zorgvuldig met de hand worden geoogst. De druiven worden vervolgens gefermenteerd met een tweede gisting in januari, waarbij de druivenschillen die overblijven van zijn Amarone wijn worden gebruikt om extra complexiteit en gewicht aan de wijn toe te voegen. De volgende stap is het rijpen van de wijn in grote Slavische eiken vaten gedurende 2 jaar voordat hij wordt gebotteld en nog eens 6 maanden rijpt in de fles.

    Dit ingewikkelde proces zorgt voor een weelderige, diep smakende wijn die barst van de wilde bessen, pruimen en rode kersen aroma's, samen met hints van gedroogde kruiden, zoete specerijen en vanille. De volle body, heldere frisheid en gematigde tannines maken dit een uitstekende partner voor vleeswaren, kazen en verse pastagerechten geserveerd met een rijke tomatensaus.
