Fasoli Gino Valpolicella Corte del Pozzo 2017

Ripe red cherry, berry jam and hints of violets characterise the seductive nose of this classic Valpolicella, while the first sip reveals redcurrant, kirsch and raisin flavours along with well-developed tannins and a balancing freshness. This is a wine that is ideal to drink now alongside fresh pasta or chicken served with a rich tomato sauce, but it can also be cellared for at least another five to six years.

The Corvinone, Corvina, and Rondinella grapes that go into this wine are all organically grown by local farmers who have been working in partnership with the Fasoli family for decades. During the harvest the pickers pass through the vineyard several times to ensure the grapes are harvested at optimum maturity. The family then separates a portion of the grapes which are left to dry out in crates for up to 20 days. This traditional appassimento method concentrates the sugars and flavours in these grapes.

The grapes which have been dried are then fermented in oak barrels, while the fresh grapes are fermented separately in stainless steel barrels. After 10 to 12 months of ageing the Fasoli family then decides how they want to blend the different components together to create a wine that is rich in flavour yet well-balanced.
