    Cosimo en Maria Teresa Varvaglione zijn de derde generatie van hun familie die het landgoed Feudi Salentini beheren, gelegen in de idyllische Italiaanse regio Salento. Het landgoed ligt dicht bij de Middellandse Zee en wordt omringd door olijfgaarden. Het heeft een warm klimaat met veel zon, wat zorgt voor perfect rijpe druiven. Geïnspireerd door de geschiedenis van het landgoed en het lokale landschap, streven Cosimo en Maria ernaar om topkwaliteit wijnen te produceren met behulp van zowel traditionele methoden als geavanceerde moderne technologie.

    De druiven voor deze wijn worden biologisch geteeld in de provincie Taranto en zorgvuldig geselecteerd om ervoor te zorgen dat alleen fruit van goede kwaliteit in de fles gaat. De druiven worden gemacereerd en gefermenteerd in temperatuur-gecontroleerde tanks om de typische rassen en de frisheid te behouden, voordat ze worden overgebracht naar Franse eiken vaten om te rijpen.

    Rijke cassis, kersen en pruimen bepalen de neus, terwijl de eerste slok een fluweelzachte textuur, ruime rijpe tannines en een robuuste volle body onthult. De intense smaken van donker fruit maken dit een geweldige partner voor gerechten met rood vlees zoals biefstuk of stevige groentegerechten zoals aubergine parmigiana. Desgewenst kan hij nog enkele jaren worden bewaard.
