A Birthday to Remember with DAOU & Colomé Celebrating my mother’s birthday was made even more special thanks to two incredible wines—DAOU Cabernet Sauvignon 2021 and Colomé Auténtico Malbec 2020. The star of the evening was undoubtedly the DAOU Cabernet Sauvignon. From the first sip, it enveloped us in its rich, velvety embrace. The deep dark fruit flavors, hints of cocoa, and perfectly balanced oak made every glass feel like a true indulgence. It was bold yet elegant, a wine that effortlessly brought warmth and joy to our gathering. Seeing my mother savor each sip with a smile made it all the more memorable. The Colomé Auténtico Malbec also delivered beautifully, with its pure expression of high-altitude Malbec. It was powerful, with ripe blackberries, spice, and a smooth, lingering finish—an excellent complement to the evening. These wines didn’t just enhance our meal; they became part of the celebration, elevating every toast and conversation. A heartfelt thank you to DAOU and Colomé for making this special occasion truly unforgettable!

    Een onvergetelijke verjaardag met DAOU & Colomé Het vieren van mijn moeders verjaardag werd nog specialer dankzij twee ongelooflijke wijnen - DAOU Cabernet Sauvignon 2021 en Colomé Auténtico Malbec 2020. De ster van de avond was ongetwijfeld de DAOU Cabernet Sauvignon. Vanaf de eerste slok werden we omarmd door een rijke, fluweelzachte smaak. De diepe aroma's van donker fruit, hints van cacao en perfect gebalanceerd eikenhout zorgden ervoor dat elk glas aanvoelde als een ware verwennerij. Hij was gedurfd en toch elegant, een wijn die moeiteloos warmte en vreugde bracht aan onze bijeenkomst. Toen ik mijn moeder elke slok met een glimlach zag proeven, was het des te gedenkwaardiger. De Colomé Auténtico Malbec leverde ook prachtig, met zijn pure expressie van hooggelegen Malbec. Hij was krachtig, met rijpe bramen, kruiden en een zachte, aanhoudende afdronk - een uitstekende aanvulling op de avond. Deze wijnen versterkten niet alleen onze maaltijd; ze werden een deel van de viering, waardoor elke toast en elk gesprek een hoogtepunt werd. Hartelijk dank aan DAOU en Colomé voor het onvergetelijk maken van deze speciale gelegenheid!

    Opening met verleidelijke aroma's van tropisch fruit, peer en limoen, samen met subtiele florale hints, deze lichte en verfrissende Sauvignon Blanc is een ideale keuze voor een zomers aperitief. In de mond is de wijn fris en droog met een pittige zuurgraad en een gemiddelde body die de rijpe perzik-, mango- en grapefruitsmaken aanvullen. Dankzij de evenwichtige frisheid van de wijn is deze frisse witte wijn een elegante begeleider van gebakken vis, verse zeevruchten of zelfs een selectie romige kazen.

    Honig oogst de Sauvignon Blanc druiven voor deze wijn van hun duurzaam beheerde wijngaard in de bekende Rutherford regio van Napa Valley. Hier zijn de fijne kiezel-, leem- en zandbodems goed doorlatend en helpen om intens smakende wijnen zoals deze Sauvignon Blanc te creëren, die het unieke terroir van het gebied weerspiegelen.

    Om het pure, zuivere raskarakter van de Sauvignon Blanc tot uitdrukking te brengen, gebruikt Honig twee verschillende wijnbereidingsmethoden. Een deel van de druiven gaat direct als hele trossen naar de pers, terwijl de overige druiven zorgvuldig worden ontsteeld en de druivenschillen enkele uren in contact blijven met de most voordat de persing plaatsvindt om de citrussmaken en -aroma's te versterken. De volgende stap na de vinificatie is het rijpen van de wijn op de droesem voor een korte tijd in roestvrijstalen tanks om iets meer textuur en body aan de wijn toe te voegen voordat deze wordt gebotteld.
