Een onvergetelijke verjaardag met DAOU & Colomé Het vieren van mijn moeders verjaardag werd nog specialer dankzij twee ongelooflijke wijnen - DAOU Cabernet Sauvignon 2021 en Colomé Auténtico Malbec 2020. De ster van de avond was ongetwijfeld de DAOU Cabernet Sauvignon. Vanaf de eerste slok werden we omarmd door een rijke, fluweelzachte smaak. De diepe aroma's van donker fruit, hints van cacao en perfect gebalanceerd eikenhout zorgden ervoor dat elk glas aanvoelde als een ware verwennerij. Hij was gedurfd en toch elegant, een wijn die moeiteloos warmte en vreugde bracht aan onze bijeenkomst. Toen ik mijn moeder elke slok met een glimlach zag proeven, was het des te gedenkwaardiger. De Colomé Auténtico Malbec leverde ook prachtig, met zijn pure expressie van hooggelegen Malbec. Hij was krachtig, met rijpe bramen, kruiden en een zachte, aanhoudende afdronk - een uitstekende aanvulling op de avond. Deze wijnen versterkten niet alleen onze maaltijd; ze werden een deel van de viering, waardoor elke toast en elk gesprek een hoogtepunt werd. Hartelijk dank aan DAOU en Colomé voor het onvergetelijk maken van deze speciale gelegenheid!

    A Birthday to Remember with DAOU & Colomé Celebrating my mother’s birthday was made even more special thanks to two incredible wines—DAOU Cabernet Sauvignon 2021 and Colomé Auténtico Malbec 2020. The star of the evening was undoubtedly the DAOU Cabernet Sauvignon. From the first sip, it enveloped us in its rich, velvety embrace. The deep dark fruit flavors, hints of cocoa, and perfectly balanced oak made every glass feel like a true indulgence. It was bold yet elegant, a wine that effortlessly brought warmth and joy to our gathering. Seeing my mother savor each sip with a smile made it all the more memorable. The Colomé Auténtico Malbec also delivered beautifully, with its pure expression of high-altitude Malbec. It was powerful, with ripe blackberries, spice, and a smooth, lingering finish—an excellent complement to the evening. These wines didn’t just enhance our meal; they became part of the celebration, elevating every toast and conversation. A heartfelt thank you to DAOU and Colomé for making this special occasion truly unforgettable!

    Het Champagnehuis Mandois werd in 1862 opgericht door Victor Mandois, met wijngaarden die zijn overgrootvader Jean in 1735 had gekocht. Vandaag de dag bezit dit familiebedrijf ongeveer 40 hectare wijngaarden in Epernay en in het Sezannais-gebied, waar de teelt zich voornamelijk richt op Chardonnay. De kelders, die dateren uit de 17e eeuw, bevinden zich onder de kerk van Pierry.

    De Chardonnay druiven worden handmatig geoogst van verschillende wijngaarden van de Côte des Blancs en Epernay, met name van Chouilly, Vertus en Pierry. De vinificatie vindt voor 80% plaats in stalen tanks en voor 20% in eikenhouten vaten, om het fruitige karakter en de delicate smaken van deze prachtige Blanc de Blancs te behouden. De dosering is laag en de wijn rust ongeveer 4 jaar in de kelder op zijn droesem, voordat hij gedegorgeerd wordt.

    Champagne Mandois Blanc de Blancs Premier Cru onthult een briljante kleur met gouden tinten en een fijn en persistent perlage. Het aromaprofiel is fris en breed met bloemige en fruitige tonen en hints van brioche. In de mond is hij breed en complex, evenwichtig en verfrissend. De bubbels zorgen voor een aangename en fluweelzachte textuur en de afdronk is lang en licht ziltig. Hij is uitstekend bij gerookte zalm of forel, bij zeevruchten en verse kaas.
