Een onvergetelijke verjaardag met DAOU & Colomé Het vieren van mijn moeders verjaardag werd nog specialer dankzij twee ongelooflijke wijnen - DAOU Cabernet Sauvignon 2021 en Colomé Auténtico Malbec 2020. De ster van de avond was ongetwijfeld de DAOU Cabernet Sauvignon. Vanaf de eerste slok werden we omarmd door een rijke, fluweelzachte smaak. De diepe aroma's van donker fruit, hints van cacao en perfect gebalanceerd eikenhout zorgden ervoor dat elk glas aanvoelde als een ware verwennerij. Hij was gedurfd en toch elegant, een wijn die moeiteloos warmte en vreugde bracht aan onze bijeenkomst. Toen ik mijn moeder elke slok met een glimlach zag proeven, was het des te gedenkwaardiger. De Colomé Auténtico Malbec leverde ook prachtig, met zijn pure expressie van hooggelegen Malbec. Hij was krachtig, met rijpe bramen, kruiden en een zachte, aanhoudende afdronk - een uitstekende aanvulling op de avond. Deze wijnen versterkten niet alleen onze maaltijd; ze werden een deel van de viering, waardoor elke toast en elk gesprek een hoogtepunt werd. Hartelijk dank aan DAOU en Colomé voor het onvergetelijk maken van deze speciale gelegenheid!

    A Birthday to Remember with DAOU & Colomé Celebrating my mother’s birthday was made even more special thanks to two incredible wines—DAOU Cabernet Sauvignon 2021 and Colomé Auténtico Malbec 2020. The star of the evening was undoubtedly the DAOU Cabernet Sauvignon. From the first sip, it enveloped us in its rich, velvety embrace. The deep dark fruit flavors, hints of cocoa, and perfectly balanced oak made every glass feel like a true indulgence. It was bold yet elegant, a wine that effortlessly brought warmth and joy to our gathering. Seeing my mother savor each sip with a smile made it all the more memorable. The Colomé Auténtico Malbec also delivered beautifully, with its pure expression of high-altitude Malbec. It was powerful, with ripe blackberries, spice, and a smooth, lingering finish—an excellent complement to the evening. These wines didn’t just enhance our meal; they became part of the celebration, elevating every toast and conversation. A heartfelt thank you to DAOU and Colomé for making this special occasion truly unforgettable!

    Het landgoed Chevalier, opgericht door Emile Dubois, heeft een lange familietraditie van 5 generaties en bijna 180 jaar. Vandaag de dag bezit het domein, dat gerund wordt door Claude en zijn 3 dochters, wijngaarden van ongeveer 15 hectare verspreid over enkele van de meest gerenommeerde appellations in Bourgondië, waaronder Aloxe-Corton, Ladoix en Gevrey-Chambertin.

    De Pinot Noir druiven worden zorgvuldig geselecteerd van een perceel van ongeveer 1,5 hectare met 25 jaar oude wijnstokken, gelegen in de Aloxe Corton appellatie. De vinificatie vindt plaats op traditionele wijze, met een periode van koude pre-maceratie gevolgd door gisting in thermoregulerende vaten. De afgewerkte wijn rust vervolgens een jaar in eikenhouten vaten (waarvan een kwart nieuw).

    Deze elegante Aloxe Corton heeft een intense kleur met donkere robijnrode tinten. Het aromaprofiel is breed en rijp, met tonen van aalbessen en gekonfijte kersen, kruidige hints en karamel. In de mond is hij rond en vlezig, evenwichtig en zacht. Hij is krachtig maar zacht, met een aangenaam evenwicht en een goede fruitconcentratie. De afdronk is lang en fris. Hij past uitstekend bij vederwild geserveerd met pittige sauzen, bij haas of Vacherin kaas.
