A Birthday to Remember with DAOU & Colomé Celebrating my mother’s birthday was made even more special thanks to two incredible wines—DAOU Cabernet Sauvignon 2021 and Colomé Auténtico Malbec 2020. The star of the evening was undoubtedly the DAOU Cabernet Sauvignon. From the first sip, it enveloped us in its rich, velvety embrace. The deep dark fruit flavors, hints of cocoa, and perfectly balanced oak made every glass feel like a true indulgence. It was bold yet elegant, a wine that effortlessly brought warmth and joy to our gathering. Seeing my mother savor each sip with a smile made it all the more memorable. The Colomé Auténtico Malbec also delivered beautifully, with its pure expression of high-altitude Malbec. It was powerful, with ripe blackberries, spice, and a smooth, lingering finish—an excellent complement to the evening. These wines didn’t just enhance our meal; they became part of the celebration, elevating every toast and conversation. A heartfelt thank you to DAOU and Colomé for making this special occasion truly unforgettable!

    Het landgoed van François Carillon ligt in de AOC Puligny Montrachet, waar zijn familie al sinds 1500 wijnstokken cultiveert. Na jaren in het familiebedrijf te hebben gewerkt, besloot François om een soloproject aan te gaan en de familiewijngaarden met zijn broer te delen. Zijn domein strekt zich nu uit over ongeveer 16 hectare, waar Chardonnay hoogtij viert. In slechts een paar jaar tijd heeft Francois Carillon al snel een reputatie opgebouwd voor zijn verfijnde wijnen van hoge kwaliteit.

    Puilgny-Montrachet is een langlevende en zeer elegante wijn gemaakt van Chardonnay druiven van een wijngaard van vier hectare, verdeeld over 8 verschillende locaties, Derrière la Velle, Reuchaux, Corvée, Levrons, Aubues, Tremblots, Les Noyer Bret en Les Rousselles. De wijnstokken, tussen de 19 en 49 jaar oud, zijn geworteld in klei- en kalkbodems. De afgewerkte wijn rust minstens 12 maanden in eikenhouten vaten, gevolgd door nog eens 6 maanden in stalen tanks.

    De wijn onthult een geurig aromatisch profiel met aangename fruitige tonen van citrus- en steenvruchten, bloemige aroma's en enkele hints van boter en hazelnoot. In de mond is hij vol en geconcentreerd, fris en evenwichtig. Hij heeft een levendige en goed geïntegreerde zuurgraad en een lange en elegante afdronk. Probeer hem eens bij gebraden kip of kreeft.
