    Het aankoopproces en de productkeuze zijn goed, maar de bezorgservice met UPS is ellendig. Ik zal helaas niet meer kopen vanwege de bezorging door UPS die zich nooit aan datum/tijd houdt en een vals excuus geeft dat ze afwezig zijn terwijl ik er was en een vrije dag heb genomen om er te zijn.

    Iago Bitarishvili is een Georgische wijnmaker van groot verstand en kunde, die als eerste in zijn land een biodynamische certificering heeft verkregen. In zijn kleine wijngaard van ongeveer twee hectare, in het dorp Chardakhi, in de Kartli regio, op kalkhoudende grond, cultiveert hij nauwgezet de oude inheemse wijnstok genaamd Chinuri.

    De vinificatie wordt op traditionele wijze uitgevoerd. De oogst gebeurt volledig handmatig en het persen gebeurt met de voeten in houten persen (lokaal Satsnaheli genoemd). De druiven worden vervolgens gemacereerd op de schil gedurende 6 maanden. De maceratie wordt gevolgd door spontane gisting met natuurlijke gisten in amfora. De uiteindelijke wijn wordt niet geklaard en niet gefilterd. De productie is beperkt en bedraagt ongeveer 2000 flessen.

    De Iago Chinuri toont een mooie diep gouden kleur. In de neus komen sterke aroma's vrij van vers fruit en zoete specerijen, met sporen van menthol en koolwaterstof. In de mond is de wijn energiek en levendig, met een belangrijke zure ruggengraat, vergezeld van een zachte component die hem evenwichtig en uiterst aangenaam maakt. Hij past uitstekend bij voorgerechten, voorgerechten met vis, wit vlees en vegetarische bereidingen.
